This summer’s blackberry harvest was a huge success!

We added blackberries to our yogurt, cereal and ice-cream. I made homemade blackberry jam and preserves which you can read about in my post Blackberry Jam from the Garden.
My husband came up with the idea of adding the blackberry preserves to a vodka and club soda. The lemon juice and simple syrup help round out the flavors for this perfect summer cocktail.

Blackberry Vodka Cocktail
Refreshing vodka cocktail with blackberries perfect for summer.
Servings: 1
Ingredients
- 1 tablespoon blackberry preserves
- 2 oz vodka
- juice from 1/2 lemon
- 1 oz simple syrup
- club soda
- ice
Instructions
- Fill highball glass with ice.
- Add vodka and simple syrup.
- Fill remainder of glass with club soda and stir lightly.
- Drop spoonful of blackberry preserves into center.
