Creamy tomato soup with fire roasted tomatoes and fresh basil from the garden!

Summertime means loads of basil and tomatoes from the garden. With fall just around the corner, I’m harvesting my basil daily and using it in recipes like this satisfying tomato basil bisque.

Tomato basil bisque is super easy to make and is perfect for panini night pairings or grilled cheese sandwiches for lunch.
Tomato Basil Bisque

Servings: 4
Ingredients
- 2 tablespoons olive oil
- 1/2 yellow onion chopped
- 1 small celery rib chopped
- 1 small carrot chopped
- 1 large clove garlic chopped
- 1 14.5 oz can fire roasted tomatoes
- 1 14.5 oz can chicken broth
- 1 teaspoon tomato paste
- salt and pepper
- 1/2 teaspoon dried oregano
- 1/2 cup chopped fresh basil
- 1/4 cup heavy cream
Instructions
- Heat olive oil and butter in dutch oven over medium heat.
- Add onions, carrots and celery and sprinkle with salt. Cook until starting to brown.
- Add garlic and stir for one minute. Do not let garlic burn.
- Add chicken broth, tomato paste and tomatoes.
- Stir in seasonings and simmer for 15 minutes.
- Use immersion blender to process until smooth. Stir in cream and blend.
- Season with salt and pepper to taste and mix in fresh basil until wilted. Serve with fresh bread or grilled cheese.
