French Onion Soup

Perfect fall or winter flavored with onions and fresh thyme

Ingredients

  • 4-5 large onions
  • 1/4 cup butter
  • 1 bay leaf
  • 4 sprigs fresh thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 cup white wine
  • 1 10.5 oz can beef consommé
  • 5 cups chicken broth
  • 4 slices sourdough bread cubed
  • 6 slices Swiss or gruyere cheese

Instructions

  • Melt butter over medium heat in dutch oven.
  • Add sliced onions and salt. Cook until caramelized about 25-35 minutes stirring often.
  • Add wine and scrape up browned ‘fond' from onions. Add herbs and broths. Bring to a boil.
  • Simmer for 20 minutes. Remove herbs.
  • Ladle soup into ovenproof bowls. Place bread cubes on top. Add cheese on top of bread.
  • Heat under broiler until cheese is lightly browned and bubbly. Carefully remove and enjoy!
