Jalapeño Corn Dip

Spicy buttery corn dip served with corn chips is perfect for football season.

Ingredients

  • 1 15 oz. bag of frozen white corn
  • 1/2 stick butter
  • 1 block of cream cheese, softened
  • 2 tablespoons diced jalapeños (from a jar)
  • 2 tablespoons liquid from jar of diced jalapeños
  • Frito Scoops corn chips

Instructions

  • Preheat oven to 400 degrees. (375 if convection)
  • Grease baking dish lightly.
  • Let cream cheese and butter soften on counter or use microwave.
  • Mix all ingredients together with hand mixer. The frozen corn will make ingredients stick together. Spread evenly in baking dish.
  • Bake at 400 for 40-50 minutes (375 convection 25-35minutes), stirring carefully after 20 minutes. Remove when bubbly.
  • Serve with large corn chips.

Notes

Add more jalapeños and juice from the jar for a spicier dip.
Yellow corn can be used as well, but I prefer white corn.
