Steak and Arugula Pasta with Balsamic Dressing
A simple fast way to use leftover steak and homegrown arugula that tastes deliciously tangy and nutty!

- 1 whole steak cooked
- ½ pound penne pasta
- 2 cups arugula
- ⅓ cup balsamic dressing
- ½ cup feta crumbled
- ⅓ cup pine nuts toasted
- 1 tbsp butter
- salt as desired
Bring pot of salted water to a boil and add penne pasta. Cook until al dente.
While pasta is cooking, slice and cut steak into bite sized pieces.
Wash and dry arugula. Cut into smaller size if needed.
Toast your pine nuts if necessary by heating in a dry skillet and tossing until evenly golden.
Crumble feta and prepare dressing if needed.
Melt butter in skillet. Add steak for a minute or two until warmed through.
Drain pasta and add to large serving bowl. Top with meat, nuts, feta and arugula.
Drizzle balsamic dressing over everything and stir gently to combine. Enjoy warm or cold!
