Steak and Arugula Pasta with Balsamic Dressing

A simple fast way to use leftover steak and homegrown arugula that tastes deliciously tangy and nutty!

Ingredients

  • 1 whole steak cooked
  • ½ pound penne pasta
  • 2 cups arugula
  • cup balsamic dressing
  • ½ cup feta crumbled
  • cup pine nuts toasted
  • 1 tbsp butter
  • salt as desired

Instructions

  • Bring pot of salted water to a boil and add penne pasta. Cook until al dente.
  • While pasta is cooking, slice and cut steak into bite sized pieces.
  • Wash and dry arugula. Cut into smaller size if needed.
  • Toast your pine nuts if necessary by heating in a dry skillet and tossing until evenly golden.
  • Crumble feta and prepare dressing if needed.
  • Melt butter in skillet. Add steak for a minute or two until warmed through.
  • Drain pasta and add to large serving bowl. Top with meat, nuts, feta and arugula.
  • Drizzle balsamic dressing over everything and stir gently to combine. Enjoy warm or cold!
