Add some fresh herbs, olive oil and honey to make roasted baby carrots in this easy recipe.
Roasted Baby Carrots
Caramelized baby carrots fresh from the garden.
Servings: 2
Ingredients
- 8-10 baby carrots
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- drizzle of honey
- sprinkle of chopped rosemary or thyme
Instructions
- Preheat oven to 400 degrees F
- Wash and lightly peel carrots.
- Drizzle olive oil in small roasting dish and arrange carrots in single layer.
- Roll them around a little to distribute oil and then sprinkle with salt and pepper and fresh herbs.
- Drizzle with honey.
- Roast for 20-30 minutes. Check often to prevent over caramelizing.
Notes
Try to use carrots of same size to achieve consistent caramelizing.
Slice lengthwise if desired.
Really watch the final few minutes to prevent over caramelizing and chewy
‘candied’ carrots.
