Using Homegrown Ingredients for Homemade Crab Cakes

I’m incorporating homegrown jalapeños, bell peppers and arugula harvested from the garden. There’s just something about using homegrown ingredients when you’re cooking! It adds nutritional value, extra fresh flavor and a goodness in your belly that makes you feel happy.

The black bean corn relish and spicy cream sauce make this a restaurant quality dish perfect for company or date night.

Whether you’re a longtime fan or trying them for the first time, these crab cakes are simple to make and absolutely delicious.


Ingredients

For the Spicy Cream Sauce:

  • 1 tablespoon prepared horseradish sauce
  • 1 tablespoon dijon mustard
  • 1 cup mayonnaise
  • juice from 1 lemon
  • 2 shakes hot sauce

For the Black Bean Corn Relish:

  • 1 cup cooked corn
  • 1/2 cup cider vinegar
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 jalapeño chopped fine (ribs/seeds removed)
  • 1 tablespoon cumin
  • 3 tablespoons olive oil
  • 1 garlic clove minced
  • 1 shallot chopped fine
  • 1 (15oz) can seasoned black beans drained
  • salt and pepper to taste

For the Crab Cakes:

  • 1 (8oz) container jumbo lump crab meat, drained
  • 1/2 cup mayo
  • 1/4 teaspoon cayenne pepper
  • 1 shallot chopped fine
  • 2 tablespoons Old Bay Seasoning
  • 1 tablespoon dijon mustard
  • 1 cup Panko or regular breadcrumbs

For the plate:

  • fresh baby arugula ( you can use baby spinach leaves if you prefer)

For Frying:

  • 3-4 tablespoons canola or peanut oil (for pan-frying)

Instructions

1. Mix the Spicy Cream Sauce Ingredients

In a small bowl, whisk together the first 5 ingredients until smooth.

2. Make Black Bean Corn Relish

Mix the next 10 ingredients together in a medium bowl.

3. Chill the Mixtures

Cover the bowls and refrigerate for at least 30 minutes.

4. Blend the Crab Cake Mixture

Mix the crab meat and next 6 ingredients in a large bowl. Be careful not to break up the crab too much — you want nice chunks in every bite.

4. Form the Crab Cakes

Using your hands, form the mixture into4-5 crab cakes (about 1/2 cup each). If the cakes feel too wet, add a little more breadcrumb to help bind. If they’re too dry, add more mayo.

5. Cook to Golden Perfection

Heat oil in a large skillet over medium heat. Cook the crab cakes for about 3–4 minutes per side, or until golden brown and crispy. Handle gently when flipping.

6. Serve and Enjoy

Scoop relish on top of greens and place crab cake on top. Drizzle spicy cream sauce over all.


Tips & Variations

  • No Frying? Bake at 400°F (200°C) for 12–15 minutes, flipping halfway through.
  • Gluten-Free? Use gluten-free breadcrumbs or crushed crackers.
  • Make Ahead: Form the cakes and refrigerate up to 24 hours before cooking.

Ingredients

  • 1 tbsp horseradish sauce
  • 1 tbsp dijon mustard
  • 1 cup mayonnaise
  • 1 lemon juiced
  • 2 shakes hot sauce
  • 1 cup cooked corn
  • 1/2 cup cider vinegar
  • 1 tbsp jalapeño minced ribs and seeds removed
  • 1 tbsp cumin
  • 3 tbsp olive oil
  • 1 garlic clove minced
  • 1 shallot chopped fine
  • 15 oz can seasoned black beans
  • salt and pepper to taste
  • 8 oz container jumbo lump crab meat drained
  • 1/2 cup mayonnaise
  • 1/4 tsp cayenne pepper
  • 1 shallot chopped fine
  • 2 tbsp Old Bay Seasoning
  • 1 tbsp dijon mustard
  • 1 cup Panko breadcrumbs or regular breadcrumbs
  • 4 tbsp canola or peanut oil
  • fresh baby spinach or baby arugula

Instructions

  • Whisk first 5 ingredients in a small bowl to make spicy cream sauce; cover and keep in fridge until ready to serve.
  • Mix corn and next 10 ingredients in medium sized bowl to make relish; cover and keep in fridge until ready to serve. Wear rubber gloves when handling jalapeños or wash hands thoroughly afterwards to avoid skin irritation.
  • Mix crabmeat and next 6 ingredients in bowl until moist but shape-forming. Add more breadcrumbs if too wet, more mayo if too dry.
  • Shape into 4-5 patties. Let sit for a few minutes to set. If needed, keep in fridge until ready to cook; then let come to room temperature.
  • Swirl 3-4 tablespoons oil in non-stick pan over medium-high heat. Wait until shimmery anduse tonghs to add crab cakes to pan. Use splatter screen if needed.
  • When you see edges browning (2-3 minutes), carefully turn with tongs. Reduce heat to medium and continue cooking until done (2-3 minutes more). Remove from pan.
  • Serve over greens and black bean salsa. Drizzle with spicy cream sauce and enjoy!
