- 2 cups basil leaves
- 1 tbsp lemon juice
- 1/3 cup toasted pine nuts
- 1 large garlic clove
- 1/2 cup parmesan cheese
- 1/2 cup olive oil
- 1 tsp salt
Add toasted pine nuts, garlic, cheese and lemon juice to food processor.
Process ingredients until uniform in texture. Scrape down sides of bowl as needed.
Add pinch of salt if desired.
Add the basil leaves and stream in olive oil while processing ingredients. Scrape down sides as needed. Your pesto is the right consistency when it is completely blended and is sightly liquidy, but not watery.
Fresh homemade basil pesto can be stored in jars and refrigerated. Add a layer of olive oil to the surface before closing jar to prevent browning.
Feel free to try using walnuts instead of pine nuts.
