Jalapeño corn dip is our family’s absolute favorite. Clocking in at 45 minutes, it may not be the fastest recipe in my collection, but it’s well worth the wait. With only four ingredients, jalapeño corn dip is super easy to make and is always a hit.

I can’t take total credit for it; my dear friend, Jan Kent, made it years ago when we all lived in Charleston and she would bring it to book club or Bunco. It’s sooooo good!

All of the ingredients for jalapeño corn dip are pantry/freezer items so I can whip this up quickly. I keep a bag of frozen white corn in the freezer, cream cheese and butter in the fridge, a jar of diced jalapeños and a bag of Fritos in the pantry. Ready to go!

Jalapeño Corn Dip Instructional Tips

  • This jalapeño corn dip recipe calls for softened cream cheese and softened butter which can be done by letting them come to room temperature on the counter. However, I find it fully acceptable to use the microwave at a low power to the job for me quickly when I’m in a hurry.
  • Mixing the ingredients together in a large bowl can be arduous because the frozen corn sticks to the soft ingredients. Either put some muscle into it or break out the hand mixer like I do.
  • The flavor of the jarred jalapeños is key to this corn dip recipe. Not only do you add the diced jalapeños, you also add some of the liquid. Add more or less to adjust the amount of spice to your preference.
  • Feel free to add some freshly sliced jalapeños and really take it up a notch.
  • Frito Scoops are the chip of choice in this house, but you could use tortilla chips if you have them on hand.

  • Mixing bowls-look for mixing bowls with rubber base and lids like these.
  • Hand mixer-this one by Braun is lightweight and still packs a punch.
  • Oval baking dish-I like this cast iron one because it stays warm after removing from the oven which means your dip stays warm, too!

Ingredients

  • 1 15 oz. bag of frozen white corn
  • 1/2 stick butter
  • 1 block of cream cheese, softened
  • 2 tablespoons diced jalapeños (from a jar)
  • 2 tablespoons liquid from jar of diced jalapeños
  • Frito Scoops corn chips

Instructions

  • Preheat oven to 400 degrees. (375 if convection)
  • Grease baking dish lightly.
  • Let cream cheese and butter soften on counter or use microwave.
  • Mix all ingredients together with hand mixer. The frozen corn will make ingredients stick together. Spread evenly in baking dish.
  • Bake at 400 for 40-50 minutes (375 convection 25-35minutes), stirring carefully after 20 minutes. Remove when bubbly.
  • Serve with large corn chips.

Notes

Add more jalapeños and juice from the jar for a spicier dip.
Yellow corn can be used as well, but I prefer white corn.
