Set your top rack in the number two position now before your oven gets hot and then preheat your broiler. By keeping the rack at the lower level, your zucchini slices will have some time to cook before the cheese is fully browned. Adjust as needed for your own oven; this is the setting that works for mine, though.

After scrubbing and drying your zucchini, slice them into 1/4 inch slices. Mix the topping ingredients in a small bowl and smear a dollop on top of each slice.

I prefer the parmesan cheese in the topping because it brings a natural saltiness to the zucchini rounds, but feel free to experiment with different cheeses.

Broil until the tops are browned evenly and the cheese is bubbly.

Ingredients

  • 1 medium zucchini cut into 1/4 inch slices
  • 1/2 cup mayonnaise
  • 1 teaspoon dried basil
  • 1/2 cup shredded parmesan cheese

Instructions

  • Preheat broiler with rack at second level.
  • Arrange sliced zucchini rounds on lightly greased sheet pan.
  • Mix remaining ingredients together in bowl and spread small scoop on each round.
  • Broil zucchini rounds for a few minutes.
  • Watch carefully so they don’t burn.
  • Remove when cheese is browned and bubbly.
  • Serve warm!
