What exactly is burrata? Is it mozzarella cheese? The answer is yes and no. The outer casing of burrata is mozzarella, but the inside is a mixture of cream and shredded mozzarella cheese curds. This mixture is called ‘stracciatella’ and it forms the delicious gooey magic of this appetizer.

Enjoy this incredibly easy appetizer that involves no cooking. I like to grab some homegrown basil from the garden during the summer months. You could also add fresh tomatoes if you like.

If you can’t find burrata at your local grocery store (Hint: it’s usually in the deli section with gourmet cheeses), you can use fresh mozzarella slices instead. You’ll miss out on the creamy interior, but the appetizer would still be delicious.
