While on a recent vacation, I had avocado toast with arugula and eggs for breakfast at our hotel. I had no idea how insanely good this flavor combo would be and had to recreate it when I got home.

Homegrown Ingredients for Avocado Toast with Arugula and Eggs

Using arugula fresh from the garden adds a spicy peppery flavor to the avocado toast as well as a nutritious green perfect for starting the day.

Arugula is a cut and come again vegetable that grows in the cool season and is perfect for lots of different recipes.

Fresh eggs from the backyard chickens are another homegrown ingredient that make this meal so special.

I prefer a rustic bread loaf to make avocado toast, but you could also use sourdough or foccaccia.

I wish I could grow avocados here in South Carolina. That would make this recipe truly amazing, but alas-I have to use store bought. My avocado in this recipe photo shoot was not Instagram worthy, but it still tasted good!

How to Make Avocado Toast

To make avocado toast, gather all of your ingredients and prepare your produce. Wash and dry the arugula, carefully cut and slice the avocado and tomato, and slice the lemon or lime.

Drizzle a little lemon or lime juice over the avocado to keep it from browning.

Heat your skillet to medium high to cook your egg and start toasting your bread slices.

Melt the butter and fry the eggs to your desired doneness.

Butter the toast and arrange the arugula on it. Top with the avocado and drizzle with balsamic glaze over the top.

If you like tomatoes, you can add them as well. I personally don’t like tomatoes, and the avocado toast still tastes amazing. Do what works for you and your guests.

Finish with a fried egg and serve immediately. Fresh squeezed orange juice (did I say mimosa?) pairs perfectly with this breakfast.

Ingredients

  • 2 slices bread rustic
  • 1 avocado sliced
  • ½ cup arugula
  • 2 tbsp balsamic glaze
  • 2 eggs
  • 1 tbsp butter
  • 2 slices tomato
  • 1 tsp lemon or lime juice

Instructions

  • Wash and dry the arugula.
  • Carefully cut and slice the avocado and tomato.
  • Slice the lemon or lime. Drizzle a juice over the avocado to keep it from browning.
