Easy Roasted Okra with Creole Seasoning
Fresh okra roasted with Creole seasoning until tender and lightly crisp makes an easy, flavorful garden-to-table summer side dish.

When okra starts producing in the summer garden, it can be hard to keep up with the harvest. Roasted okra is one of my favorite ways to turn a handful of fresh-picked pods into an easy side dish.
A little olive oil and Creole seasoning are all you need. High oven heat gives the okra browned edges and great flavor without the heavier preparation of traditional fried okra.
Okra is one of those vegetables that I rely upon every summer. It outperforms everything else in the kitchen garden. I think the hotter and more humid the weather gets, the happier my okra is! I might be wilting, but it shoots up and produces abundantly.

How to Make Creole Roasted Okra
Making roasted okra is simple and fast in the oven. However, there are a few tips to keep in mind to ensure a delicious outcome for this recipe.
Choose your okra pods
When harvesting okra pods or purchasing at the market, look for bright green tender pods that are 3-5 inches long. Large length okra pods are woody and tough. Shorter ones are more tender.

Prep your okra pods
Begin by rinsing any dirt off the okra and drying the pods with a paper towel or clean dish rag. Then you will want to slice off the cap (stem end) and the pointy tip on the bottom. Slice the okra into rounds and put in a large bowl.

Season the okra
Drizzle olive oil over the okra and then sprinkle some creole seasoning on them. Toss them together with your hands or a large spoon until all of the okra pods are coated evenly.
Ginger with Roots Tip!
Creole seasoning blends vary in salt. Check yours first before adding additional salt to your okra.

Roast the okra
Arrange the okra on a sheet pan and roast at 425°F for 15-20 minutes. Give the pan a little shake halfway through to roast the okra evenly or use a pair of tongs to roll them around a bit. You want them to crisp up nicely with some caramelization on the edges.

Serve creole roasted okra
Serve your creole roasted okra hot. We love to dip ours in buttermilk ranch dressing or sriracha ranch! So good!
How to Roast Okra Without it Getting Slimy
Okra slime is a common concern I hear about from readers. The inside of an okra pod contains ‘mucilage’ or a sugar based soluble fiber and it’s actually good for you. I understand if it’s not appetizing, though!
If the slime is a concern, reduce it by limiting the cuts on the okra pod. You can make bigger pieces, halves or leave them whole.
The high temperature in the oven will also help reduce the slime. Make sure your oven temp is at least 425°F.
Finally, avoid crowding the pan. You want the entire surface area of the okra pod exposed to the high heat instead of steaming close together.
What to Serve with Creole Roasted Okra
There are plenty of summertime options for serving creole roasted okra. I like to plate it with grilled chicken or pork chops. It would also be perfect alongside fried fish or hamburgers. Garden fresh corn, yellow squash and homegrown tomatoes are all wonderful sides to add as well.

No, you do not have to soak it. Some people like to soak okra in vinegar or lemon juice first to reduce the slime, but I find the high heat takes care of it.
Can You Roast Okra Whole?
Yes, you can roast okra whole. Remove the pointy tip and the cap with a sharp knife and follow the recipe as instructed.
How Do You Keep Roasted Okra from Getting Slimy?
Wash and dry thoroughly; avoid lots of slices; roast at a high heat (425°F); leave enough space between the pods so that they roast instead of steam.
